LAMB
LOIN WITH PEPPERS
White
meat and sweet peppers.
Ingredients:
500 g. lamb loin
500 g. peppers
250 g. fresh tomato pulp
50 g. onion
50 g. celery stems
100 g. little black olives
30 g. butter
5 basil leafs
3 garlic cloves
2 thyme branches
½ dl olive oil
salt and pepper
Burn
the peppers over the flame. Peel and cut them. Cut the celery
and half-cook it in boiling salted water. Let onion and
garlic turn golden in a pan with oil. Add peppers, fresh
tomato pulp, basil, celery, olives, salt and pepper. Cook
for about ten minutes. Let the olive oil sizzle with the
garlic cloves and thyme. Add the salted and peppered lamb
loin. Bake in oven at 200°C for about ten minutes bathing
with the cooking fat.
