The town of Norcia – Norcia was founded by the Sabine at the foot of the Sibylline Mountains, by the 2nd century BC it had become a thriving Roman town. The town of Norcia is surrounded by a city wall from the 1300’s and is completely intact. The town is full of artistic history, it offers more than just its charm and its itineraries into the countryside, and it has wonderful local food. Norcia is a gastronomic paradise. The lentils of Castellucio, the barley and the black truffle – the prince of Norcia’s recipes – its cheeses and the Norcineria – the salamis and cured pork made in the fine traditional way has made Norcia World famous. |
